Sweet Potato Hash

This is a lifesaver on mornings when I’m running late. It’s quick, easy, and so delicious!


1 large sweet potato

2 Tbsp coconut oil

Dried herbs (sage, marjoram, basil, oregano, and parsley all work well)

Curry powder

Ginger powder

Salt and pepper


Grate the sweet potato and combine in a bowl with a couple of shakes each of your choice of herbs, the curry powder, and the ginger powder. Add salt and pepper to taste.

Heat the oil in a frypan and add the potato when melted. Cook until soft. About 5 minutes.

Take the sweet potato out and fry some eggs in the greasy pan. They are a delicious flavour combination, especially when the yolk oozes out into the sweet potato on your plate!

Solo Tip:

Make extra and keep it in the fridge for those Wednesday mornings when you really can’t be bothered getting out of bed ten minutes earlier to prepare breakfast. Just dump it straight into a hot pan and heat it up.
