A tasty variation on my favourite way to have veggies in the morning. Don’t be afraid of getting creative!
1/2 large beet
Salt + pepper
Fresh parsley, chopped
2 Tbsp coconut oil
Grate the carrot and beet and mix in a bowl with the salt, pepper, parsley, and a few squeezes of lemon juice.
Heat oil in a frypan and add the vegetable mixture. Cook until soft.
Enjoy as a side to any meal and keep some in the fridge. Just stick it in the pan (no extra oil required) to heat it up. I promise it will be just as delicious the second time!
